Heat a frying pan with a dash of olive oil and place the cod with the skin part down, let it cook for two minutes. Turn it over carefully and cook two more minutes or until will be ready. Add salt and pepper to the taste (I only added a little pepper), remove the cod from the frying pan.
In the same pan, without removing the remaining juice, add the vinegar, orange juice, honey, rosemary and mustard. Mix with a wooden spoon and let reduce the broth a couple of minutes. Add the cod at the sauce and, with a spoon, soak it well above.
Remove from heat and serve immediately with the sauce.
